Rice Duo
Recipe by Rougui Dia
(Serves 2)
Ingredients:
White rice
100 g Risotto Rice
1 Onion
50 g Butter
65 g White Wine
80 g Chicken Stock
Salt
Pepper
Black rice
100 Black Rice
1 Onion
50 g Butter
65 g White Wine
80 g Chicken Stock
Salt
Pepper
2 sachets Squid Ink
Sweat the onion in the butter. Coat the white (risotto) rice in the butter
and then add the white wine.
Once the wine has been absorbed, add the chicken stock. Season with salt and
pepper.
Repeat these steps with the black rice. Add the 2 sachets of squid ink to the black rice.
To finish off, add Parmesan and butter to both lots of rice - if possible truffle (or if this is not available, a little truffle brunoise or chopped truffle).
Decorate the white rice with slivers of black truffles and the black rice with slivers of white truffles.
